Sustenance Bread

We have used Laucke Phtyosoy Bread Mix for a nutritious combination of Soy and Linseed that is full of flavour and then we have added some Chia seeds for extra goodness and texture. See Alternative Bread Mixes for making a Sustenance style of bread loaf.

Ingredients

500g Laucke Phytosoy Bread Mix
5g Laucke Bakers Yeast
350ml Water
30g Chia Seeds

Method

  1. Use your bread machine, a suitable mixer to mix ingredients and knead the dough, or alternatively knead by hand. MIXING AND KNEADING
  2. Round the dough into ball or divide it into 2 smaller balls of 450gms. Allow the pieces to relax for about 10 minutes and then gently roll them into the desired shape. Do your best to keep the dough pieces warm or they will require extra time to rise. Place the moulded dough on a pre-greased tray, leaving enough room for expansion. Appearance is enhanced if any seam or ragged surface is turned to the bottom side. Place the tray in a humid draught free environment. PROOFING
  3. The loaves should be ready after approximately 40 mins. To determine if it is ready gently poke your finger into the loaf. The dough should spring back slowly and still leave a small indentation
  4. Pre heat the oven to the highest possible temperature. Place the loaf into the oven then lightly spray (mist) with water. Turn the oven temperature down to 200˚C and bake for 15-20mins.

Helpful hints

  • Tepid water will help your dough to rise
  • The amount of water suggested should give soft, sticky, smooth dough that can be readily handled by hand after thorough kneading in a machine, and a rest. If the dough is too tight, add more water. If too sticky to handle, add some more bread mix or Laucke Bakers Flour
  • You can also experiment with your own seed mix, include quinoa, pumpkin seeds, linseeds and sunflower seeds. None of these seeds require pre-soaking and the total weight of seeds should be approximately 10% of the dough weight.
