Date and Walnut Loaf

A classic Australian afternoon tea loaf that is sure to satisfy everyone in the family.

Ingredients

45g Melted butter
115g Sugar
1 tsp Mixed Spice
1 tsp Bicarb Soda
½ cup Water
1 Egg
190g Wallaby Flour
1 tsp Baking Powder
½ tsp Salt
200g Chopped Dates
50g Raisins
60g Chopped Walnuts

Method

  1. Place butter, sugar, mixed spice, bicarb soda and water in a bowl
  2. Add egg and mix until clear
  3. Add sifted Wallaby Flour, baking powder and salt
  4. Mix in dates, raisins and walnuts, this dough will be batter like
  5. Place in a lined cake tin or a greased bread tin and bake at 190°C conventional or 180°C fan forced for 50 – 55mins.

Helpful hints

Try soaking the raisins and walnuts in brandy, marsala or rum for 2hrs before making the loaf.
